| Prepare Mac and Cheese 2 days in advance. Refrigerate till stiff and then make into balls and place on a lined jelly roll pan and freeze. Just before frying, remove from freezer. Whisk eggs and place into a small dish. Place breadcrumbs into a separate dish. Coat Mac and Cheese in egg wash, then breadcrumbs and place on a paper plate, or back on the pan and continue with all pieces. Fry in oil at 350 degrees till golden brown and until centers are thawed and heated, it took us about 8 minutes- pieces were about 2/3 Cup balls. These do NOT float. Suggestions for next year are to place in a silicone muffin tray to refrigerate in order to make smaller pieces. |
