| Preheat oven to 375 degrees. These are very unique and might take a little getting used to, but they are very healthy and actually better warmed up after having been frozen. In a food processer or blender, add honey, vanilla and beans. Blend until smooth about 2 minutes. Add peanut butter and baking powder. Blend until well mixed. Stir in chocolate chips. It should be very thick and sticky. With wet hands, form into 1 1/2 in. balls and place on a cookie sheet. Press down slightly. Bake for around 12 to 14 minutes. Cookies will still be very soft. Allow to cool on the baking sheet for 5 t0 10 minutes before removing. It will smell like baking hummus in the house, but it's really good. Coleman (baby) and Simon liked them. |
