| Ingredients |
| 2 large leeks cleaned and sliced (about 4 cups) |
| 3 T Olive Oil |
| 4 Cups potatoes cut into large cubes |
| 4 cloves garlic minced |
| 1 head Green Garlic (optional) |
| 1 small onion chopped |
| 2 t smoked paprika plus a little extra |
| Salt and Pepper |
| 1 large bunch Swiss Chard, trimmed and sliced thin |
| 4 large eggs |
| Gruyere cheese (optional) |

| Descriptions |
| Heat very large skillet to medium heat with oil. Add leeks, onion, and green garlic stirring frequently till leeks are softened (about 8 minutes). Add potates and garlic and cook 15 minutes till the potatoes are tender (use a lid to speed the process). Add swiss chard, paprika and salt and pepper to taste. Cook for about 4 minutes stirring constantly or until chard is wilted. Move mixture in pan to make 4 egg-sized holes. Crack one egg into each space and sprinkle with paprika, salt and pepper. Cook about 3 minutes or until desired cook is acheived on the eggs (use cover to help cooking). Sprinkle with cheese mixture. |
